(10) ounces frozen chopped spinach 3/4 cup liquid egg substitute 3/4 cup shredded reduced-fat cheese 1/4 cup diced green bell peppers 1/4 cup diced onions 3 drops hot pepper sauce (optional) Microwave spinach for 2 1/2 min. on high. Drain excess liquid. Line a 12-cup mufin pan with foil baking cups. Spray the cups with cooking spray. Combine all ingredients in a bowl, mix well. Divide evenly among the muffin cups. Bake at 350 for approx. 20 min. or until a knofe inserted in the center comes out clean. (Quiche can be frozen ahead and reheated in microwave) 77 calories per serving. ____________________________________________ Beat the heat with this cool salad! Crab Cobb Salad 6 cups romaine lettuce, torn into bite-size pieces 1 can crabemeat (6 oz. drained) 1 cup diced ripe tomatoes or cherry tomatoes halved 1/4 cup crumbled blue cheese 2 tablespoons cholesterol-free bacon bits 1/4 cup prepared low-sugar dressing or vinaigrette Chill 2 plates. Arrange the lettuce on a large serving platter. Arrange the crabmeat, tomatoes, blue cheese and bacon bits in rows over the lettuce. Right before serving, drizzle some dressing evenly over the salad and toss well. Transfer to the 2 chilled plates. 267 calories per serving |
